This month we are open 10am-6pm Friday 28th and Saturday 29th Oct. On Saturday customers are welcome to join us for egg collecting at 2.30 and a foraging walk at 3pm.

    
 
In season in the Castlefarm Garden....
Our root crops have arrived. These include carrots, parsnips and celeriac. We also have our own grapes, parsley, apples and pears. This month is also the last chance to enjoy our peppers, aubergines, courgettes and tomatoes.

Certified organic Aberdeen Angus beef boxes –available this month
• Meat hung for 21 days to optimise on flavour and tenderness
• €13/kg for a box of mixed cuts (steaks, roasts, stewing beef and mince)
• Extremely good value for great quality product
• Boxes range from 12-16kg
As usual the boxes will include 6-8 steaks, roasts, stewing beef and good quality mince. Cost per kg is €13 and box sizes range from 12 to 16kg. Our beef is hung for 21 days and butchered in Murphy’s Craft Butchers Tullow.

Pork for October
We expect to have our own organic pork for October. This depends on how our pigs fatten up! At the moment they are gorging on windfall apples as well as organic pig nuts and milk. I will let people know by email and facebook.

Recipe
Fred’s braised beef
As the weather becomes colder and we become busier at Castlefarm my Uncle Fred’s recipe for braised beef appears regularly on our dinner menu. It takes a couple of minutes to prepare and very little looking after. The idea is that the beef cooks in its own juices slowly until extremely tender and it cannot be overcooked.
Ingredients
500g Castlefarm round steak or stewing beef
1 large onion, diced
Salt and pepper
½ cup liquid stock (or for variation try Guinness or red wine)

Method
Put the beef into a covered casserole dish and cook for 1.5 hours in a pre heated oven at 140 degrees. Then add the diced onion, seasoning and stock. Stir and cook for a further 2 + hours. Serve with root vegetables and potatoes. This is even nicer the next day.
